Now that fall is in full swing, I’ve seen fruit crisp and cobbler recipes pop up everywhere. Unfortunately most of them are made with a stick of butter, exactly the way I used to make them. After a bit of experimenting, in which both little boys were extremely excited to be my taste testers for the past few weeks, I’ve created a yummy recipe using frozen berries.
Makes 4 to 6 servings
4 cups mixed berries (fresh or frozen)
2 tbsp lemon juice
¼ cup sugar
2 tsp corn starch
½ cup whole wheat flour
½ cup old fashioned oats
½ cup brown sugar
1/8 tsp salt
1/3 cup oil
1. Preheat oven to 350oF.
2. If using frozen berries, heat for 2-3 minutes in the microwave. They do not need to be fully defrosted, but should be soft enough to mix.
3. Add lemon juice, sugar and cornstarch to the berries. Mix well. Place in a 9×9 baking dish.
4. In a separate bowl, mix the flour, oats, brown sugar and salt. Add oil and mix until just combined. Sprinkle flour mixture over berries.
5. Bake uncovered for 30 minutes, until cobbler is thick and bubbly. Serve warm.
