We picked fresh corn as our special vegetable this week. Bebop was very skeptical of it in the store. He’s knows what corn on the stalk look like and what corn on the cob looks like. I don’t think he realized they were the same thing. At first he didn’t believe me when I told him the corn is under the green “leaves”. Bebop did get very excited to pull back all the layers and find the corn inside. He husked one ear all by himself.
Corn is my favorite vegetable. I use frozen corn in many different dishes year round, but it doesn’t compare to fresh corn! The best way to fix corn (in my opinion) is to boil in lightly salted water until the corn has a bright, vivid color, about 7 minutes. Pull off the husk and silks, then straight into a pot of boiling water.
My second favorite recipe using corn (fresh or frozen) is taco salad. If using fresh corn, cook as above then cut off the kernels. The is a basic dump and mix recipe. Take a large bowl in dump in taco meat (seasoned ground beef, browned), black beans, corn, fresh tomato (substitute salsa when not in season), iceberg lettuce, avocado, and a little lime juice. I’ve made this with varying amounts of everything depending on what I have in the house. Its also good as a vegetarian meal, just mix a little taco seasoning with lime juice to make a dressing or use salsa as the dressing. Jared and Bebop will sometimes put cheddar cheese and sour cream on top. (I’m still on a dairy free diet.) Serve with tortilla chips, I like to crush and mix them into the salad. You can also wrap in a tortilla, which makes a very portable lunch.
